Cooking with CRS: Spring Avocado Egg Salad

Finally, it is officially spring! 

Try this light Avocado Egg Salad that uses mashed avocado in place of mayo. 

Perfect for a Pesach lunch since it is very delish on matzoh! 

Ingredients 

8 hard-boiled eggs 

1 avocado 

ยผ cup chopped green onion (optional) 

1 tsp mustard (yellow or Dijon) 

ยผ tsp paprika 

Salt and pepper 

Directions 

1. Chop the eggs and put them in a salad bowl 

2. Mash the avocado with a fork 

3. Mix the mashed avocado, mustard, onion, and paprika into eggs until thoroughly combined 

4. Season with salt and black pepper and enjoy!
